Beer recipes

SPICY CHILLI BEEF IN SUN LIK BEER BATTER

INGREDIENTS
For the beef
450g lean steak, cut into fine strips
2 carrots, finely sliced
2 spring onions, chopped
1 tbsp honey
1 tsp lemon juice
2 tbsp Sun Lik Beer
1 tsp finely chopped ginger
1 green chilli, seeded and
finely chopped
1 red chilli, seeded and finely chopped
For the batter
2 eggs
3/4 tsp salt
1/2 tsp finely chopped garlic
6 1/2 tbsp plain flour
3 tbsp cornflour
60ml milk
60ml Sun Lik Beer

METHOD
Beat the eggs then mix in the salt,
garlic, flour, cornflour, beer and milk
to make a smooth batter.
Mix honey, lemon juice, beer, carrot
and ginger together and marinate the
beef in it.
Fry carrots, chillis and spring onions
in a wok with 1-2 tbsp oil for a couple
of minutes.
Dip the beef into the batter then add
it to the wok under a fierce heat,
adding extra oil if required. Cook for 3-4
minutes or until the batter is golden, then
add the marinade for another minute and
serve quickly. The result should be spicy,
sticky and sweet.

ORVAL BREWERS’ SOUP
Serves 4

INGREDIENTS
1 bottle of Orval Beer
2 pints of well-seasoned beef stock
2 teaspoons of cornflour
1/2 pint of milk
1/4 pint of single cream
2 egg yolks
Salt, pepper and a little nutmeg
to taste

METHOD
Put the beef stock and beer in a pan,
season with salt and pepper and a
little nutmeg. Bring to the boil, then
lower the heat and simmer for at least
10 minutes
Dilute the cornflour in the milk to
make a paste, add to the soup and
whisk to prevent lumps from forming. Bring.....
